Ingredients

  • 4 ripe plantains
  • 3 tablespoons palm oil
  • 1 teaspoon cane sugar
  • 1 teaspoon salt
  • 1 tablespoon rum
  • 1 tablespoon cane sugar
  • 1 chopped onion
  • 1 clove of garlic
  • 1 mint leaf
  • 1 teaspoon black pepper

Method

  1. Peel the plantains and cut them into thick slices about 1 cm thick.
  2. Fry the plantain slices in a pan with palm oil until they become crispy and golden brown.
  3. In a skillet, sauté the onion and garlic with a small amount of palm oil.
  4. Add the plantain slices, rum, salt, cane sugar, pepper, and mint leaf.
  5. Stir well and cook for 5-7 minutes until the slices are soft and the flavor is well distributed.
  6. Serving suggestion: serve with a chili sauce or a Greek yogurt sauce.
