Criollo Grilled Steak with French Fries

A delicious fusion of traditional Cuban churrasco and crispy peregrinas French fries.

Ingredients
- 4 beef steaks (about 8.8 oz each)
- 1 kg of potatoes
- 1 tablespoon of salt
- 1 tablespoon of black pepper
- 1 tablespoon of balsamic vinegar
- 1 tablespoon of olive oil
- 1 onion
- 100 ml of criollo sauce (optional)
Method
- Slice the potatoes thinly and let them soak in cold water for 10 minutes, then dry them thoroughly.
- Prepare a marinade with balsamic vinegar, olive oil, salt, and black pepper, and marinate the beef steaks for 1 hour.
- In a pan, heat the oil and sauté the onion and garlic for 2 minutes.
- Grill the criollo steaks on a high heat grill for 5-7 minutes per side, checking the doneness.
- Fry the potato slices in plenty of hot oil for 5-7 minutes or until crispy and golden.
- Serve the beef steaks with the fried potato slices, drizzled with criollo sauce if desired.
The story
The criollo churrasco originated in the Guantánamo region, where beef consumption has always been prevalent. The peregrinas, Cuban potatoes, were introduced to the local cuisine to add a crispy and flavorful touch.
