Congrí
Congrí is a delicious Cuban dish, a delightful mix of plantains and vegetables caramelized with the aroma of rum and cherrywood.

Ingredients
- 4 zucchini
- 8-10 ripe plantains
- 2 onions
- 2 tablespoons of palm oil
- 1 tablespoon of cane sugar
- 2 tablespoons of rum
- 1 tablespoon of lemon juice
- Salt and pepper to taste
- Soy beans or carrots (optional)
Method
- Peel the zucchini and cut them into thin slices. Peel the plantains and cut them into thin slices.
- In a pan, heat the palm oil and sauté the onions until they turn golden.
- Add the zucchini and plantains, sauté until they become soft.
- Add the cane sugar, rum, and lemon juice, stir well and continue cooking until the vegetables are caramelizing.
- Season with salt and pepper to taste, and if desired, add soy beans or carrots for an extra touch.
- Serve hot with a splash of rum to enhance the flavor.
The story
Congrí originates from the use of plantains in Cuban cuisine, but its modern version has been influenced by the presence of Caribbean and American immigrants.
