Ingredients

  • 2 kg of peeled corn
  • 500 g of sugar
  • 300 g of cocoa powder
  • 100 g of cocoa in powder
  • 1 liter of water
  • 10 banana leaves
  • 10 corn husks
  • 1 tablespoon of cinnamon powder
  • 1 teaspoon of cardamom powder
  • 1 teaspoon of pepper powder
  • 1 tablespoon of table sugar
  • 1 cup of butter

Method

  1. In a pot, mix the cornmeal, sugar, cocoa, cinnamon, cardamom, pepper, and table sugar. Add the water and butter, stirring until you get a smooth paste.
  2. Prepare the banana and corn leaves by trimming the ends and folding them to form a wrapper.
  3. Divide the paste into equal portions and place them inside the banana and corn wrappers.
  4. Make a small cut along the banana leaf to facilitate opening.
  5. Fold the banana and corn leaves around the paste, sealing the package tightly.
  6. Place the tamales on a moderate fire and cook for 2-3 hours, checking occasionally to ensure they are well covered.
  7. Serve hot, perfect for Christmas celebrations.
