A traditional dish from Cartagena, Arroz con Coco is a sweet and savory rice delicacy flavored with coconut and spices.

Ingredients
- 200g of basmati rice
- 500ml of coconut milk
- 100g of cane sugar
- 1 teaspoon of granulated sugar
- 1/2 teaspoon of ground cinnamon
- 1/4 teaspoon of ground cardamom
- 1/4 teaspoon of ground ginger
- 100g of toasted almonds
- 100g of coconut flakes
- 100g of raisins
- Salt to taste
Method
- Rinse the rice and let it soak for 15 minutes.
- In a pot, bring the water to a boil and add the rice, coconut milk, cane sugar, granulated sugar, cinnamon, cardamom, and ginger. Cook over medium heat for 15-20 minutes, or until the rice is al dente.
- Add the toasted almonds, coconut flakes, and raisins, stirring well.
- Let the rice cool for 5 minutes, then add a bit of salt to taste.
- Serve warm, garnished with a sprinkle of coconut flakes.
