Ingredients

  • 2 red onions, finely chopped
  • 100 g fresh parsley, finely chopped
  • 100 g wild parsley, finely chopped
  • 100 g fresh thyme, finely chopped
  • 1 tablespoon red pepper flakes
  • 1 tablespoon salt
  • 100 ml balsamic vinegar
  • 100 ml extra virgin olive oil
  • 1 red onion, finely chopped
  • 1 tablespoon wine vinegar
  • 1 tablespoon lemon juice

Method

  1. In a bowl, mix the red onions, parsley, wild parsley, and thyme.
  2. Add the red pepper flakes and salt, mixing well.
  3. In another bowl, mix the balsamic vinegar, extra virgin olive oil, wine vinegar, and lemon juice.
  4. Combine the vinegar mixture with the vegetable mixture and mix well.
  5. Let it rest for at least 30 minutes before serving to allow the flavors to meld.

Originating from the Entre Ríos region, chimichurri was traditionally used to flavor meat. It has gained popularity across Argentina and the world due to its unique and distinctive flavor.
