Chicken Parmesan with Tomato Sauce

Ingredients
- 4 chicken breasts
- 2 eggs
- 200 grams of crushed bread
- 200 grams of mozzarella
- 500 grams of canned tomatoes
- 50 grams of fresh basil
- extra virgin olive oil
- salt and pepper
- 200 grams of fried potatoes
Method
- Prepare the chicken breasts, cut them into square pieces and season with salt.
- In a bowl, mix the eggs.
- In another bowl, mix the crushed bread.
- Dip the chicken pieces first in the egg, then in the bread crumbs, making sure they are well coated.
- In a pan, heat the oil and fry the chicken pieces until golden.
- In the same pan, add the canned tomatoes, basil, salt, and pepper, cook on medium heat for 10 minutes.
- Place the chicken pieces on top of a mozzarella crust, cover with the tomato sauce.
- Serve hot with fried potatoes.
