Chicken Empanada

A classic of Cuban cuisine, Santiago de Cuba's chicken empanadas are crispy and flavorful, perfect as an appetizer or light lunch.

Ingredients
- 200 g of flour
- 1 egg
- 200 g of pork lard
- 300 g of chicken, rolled
- 1 onion, finely chopped
- 100 g of sliced vegetables (tomato, red onion)
- 50 g of chicken broth
- 100 g of grated cheese
- Salt and pepper to taste
- Oil for frying
Method
- In a bowl, mix the flour, egg, and pork lard until you get a homogeneous dough.
- Meanwhile, in another bowl, mix the chicken, finely chopped onion, sliced vegetables, chicken broth, grated cheese, salt, and pepper.
- Roll the dough into thin slices and stuff with the chicken mixture.
- Fry the empanadas in plenty of hot oil until they are crispy and golden.
- Serve them hot with a bit of tomato sauce or soy sauce, if you like.
