Carimañolas

This traditional Cartagena dish is a delightful mix of sweet potatoes and beef wrapped in banana leaves.

Ingredients
- 2 kg of sweet potatoes
- 500 g of beef
- 10 banana leaves
- 2 onions
- 1 tablespoon of chili
- 3 tablespoons of oil
- 200 ml of beef broth
- Salt and pepper to taste
- 100 g of onion
- 1 tablespoon of wine vinegar
Method
- Prepare the sweet potatoes by slicing them thinly and cooking them in salted water.
- Cut the beef into small pieces and mix it with onions, chili, wine vinegar, and a bit of salt and pepper.
- Prepare the banana leaves by cutting the ends and folding them to form a wrapping.
- Fill the banana leaves with the sweet potato and beef mixture, sealing the wrapping.
- Make the cooking broth by adding oil, beef broth, and banana leaves to a pot, bringing it to a boil.
- Cook the carimañolas in boiling water for about 30 minutes, checking the doneness with a knife.
- Serve hot with a bit of broth on top.
The story
Carimañolas were introduced to Cartagena by Spanish colonizers but have since been infused with local culinary traditions, becoming a popular dish during festivals and celebrations.
