Ingredients

  • 200g of pork
  • 1 onion
  • 2 slices of bread
  • 1 bay leaf
  • 1 basil leaf
  • 1 tablespoon of tomato sauce
  • Salt and pepper to taste
  • Oil for frying
  • 1 red onion
  • 1 cherry tomato
  • 1 white onion
  • 1 chili pepper

Method

  1. Slice the pork into thin pieces and season with salt and pepper.
  2. Fry the pork in a pan with a little oil until it's golden brown.
  3. Chop the onion, red onion, white onion, and chili pepper into cubes.
  4. In a bowl, mix the onions, red onion, white onion, chili pepper, and a bit of salt.
  5. Add the cherry tomatoes, cut into cubes, and mix well.
  6. Spread a tablespoon of tomato sauce on each slice of bread, then add the pork slices and the vegetables.
  7. Cover with the other slice of bread, add the bay leaf and basil leaf.
  8. Fry the bocadillo in a pan with a little oil until it's golden brown on both sides.

The story

The bocadillo, originally from Peru, was brought to Colombia by the colonizers and has evolved into a local version with typical ingredients such as pork and onion.
