Ingredients

  • 200 g of fresh blueberries
  • 100 g of sugar
  • 200 ml of water
  • 100 ml of milk
  • 1 tablespoon of caster sugar
  • 1 tablespoon of rum
  • 2 mint leaves
  • 100 g of cream
  • 1 teaspoon of caster sugar (for the cream)

Method

  1. Wash and pick the blueberries, then put them in a pot.
  2. Add water, sugar, and rum, bring to a boil.
  3. Boil for 10-15 minutes, stirring occasionally.
  4. Mash gently with a masher.
  5. Add milk and cream, stir well.
  6. Whip the cream to get a creamy consistency.
  7. Add caster sugar and mint leaves.
  8. Serve hot, topped with a spoonful of cream.

Blueberry soup is a central tradition in Swedish cuisine, especially during the Christmas season. It is made with fresh blueberries, a fruit that grows wild in Swedish forests.
