Ingredients

  • 400g of salted cod
  • 2 ripe tomatoes
  • 1 onion
  • 2 carrots
  • 1 zucchini
  • 2 tablespoons of olive oil
  • 1/2 onion
  • 100g of pancetta
  • 1 liter of fish broth
  • Salt and pepper to taste
  • 100g of chopped parsley
  • 1 teaspoon of white wine vinegar

Method

  1. Clean the salted cod and cook it in salted water for 2 hours, then cool it and cut it into pieces.
  2. In a pan, sauté the olive oil with the pancetta and the onion.
  3. Add the carrots, zucchini, and onion and cook on medium heat for 10 minutes.
  4. Add the chopped tomatoes and cook for another 10-15 minutes.
  5. Add the fish broth, salt, pepper, and white wine vinegar, bringing to a boil.
  6. Finally, add the cod and parsley, stirring well.
  7. Cook on medium heat for 20-30 minutes, stirring occasionally.

Baccalà in salsa is a dish with roots in the maritime traditions of the Adriatic coast and has become a classic of Bolognese cuisine.
