A rich tomato and vegetable sauce that accompanies the salted cod in a traditional Bolognese dish.

Ingredients
- 400g of salted cod
- 2 ripe tomatoes
- 1 onion
- 2 carrots
- 1 zucchini
- 2 tablespoons of olive oil
- 1/2 onion
- 100g of pancetta
- 1 liter of fish broth
- Salt and pepper to taste
- 100g of chopped parsley
- 1 teaspoon of white wine vinegar
Method
- Clean the salted cod and cook it in salted water for 2 hours, then cool it and cut it into pieces.
- In a pan, sauté the olive oil with the pancetta and the onion.
- Add the carrots, zucchini, and onion and cook on medium heat for 10 minutes.
- Add the chopped tomatoes and cook for another 10-15 minutes.
- Add the fish broth, salt, pepper, and white wine vinegar, bringing to a boil.
- Finally, add the cod and parsley, stirring well.
- Cook on medium heat for 20-30 minutes, stirring occasionally.
The story
Baccalà in salsa is a dish with roots in the maritime traditions of the Adriatic coast and has become a classic of Bolognese cuisine.
