Baba Ghanoush
A delicious appetizer made from roasted eggplant, seasoned with extra virgin olive oil, lemon, and garlic.

Ingredients
- 4 eggplants
- 2 onions
- 2 tablespoons of extra virgin olive oil
- 1 onion
- 2 garlic cloves
- 1 lemon
- Salt and pepper to taste
- 1 tablespoon of tahini (optional)
Method
- Roast the eggplants in the oven at 200°C for about 45 minutes, until they are soft.
- Let the eggplants cool, then cut them into small pieces and pass them through a fork or a mixer.
- Chop the garlic and onion, then fry in a little oil until golden.
- Prepare the dip by mixing the mashed eggplant, fried garlic, tahini (if using), lemon juice, salt, and pepper.
- Serve cold with bread slices or as an appetizer.
- Add tahini for a richer and creamier taste, if desired.
