Argentine Catamarca Tortilla

A delicious Catamarca-style tortilla, made with eggs, potatoes, and typical spices from the region.

Ingredients
- 4 eggs
- 200g potatoes
- 2 onions
- 100g mozzarella cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 teaspoon cayenne pepper (optional)
- 1/2 teaspoon thyme
- 1/2 teaspoon chopped parsley
Method
- Peel and cut the potatoes into cubes and boil them in salted water until soft.
- Beat the eggs in a bowl and add salt, pepper, and cayenne pepper (if desired).
- In a pan, sauté the onions in olive oil until they are translucent.
- Add the boiled potatoes and stir well.
- Bring the pan to a simmer and cook for 5-7 minutes, adding salt and pepper if needed.
- Add the mozzarella cheese and stir until the cheese is completely melted.
- Taste and add thyme and parsley if desired.
- Transfer the preparation into a baking dish and bake in a preheated oven at 180°C for 20-25 minutes, until the surface is golden.
