Ingredients

  • 4 eggs
  • 200g potatoes
  • 2 onions
  • 100g mozzarella cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon thyme
  • 1/2 teaspoon chopped parsley

Method

  1. Peel and cut the potatoes into cubes and boil them in salted water until soft.
  2. Beat the eggs in a bowl and add salt, pepper, and cayenne pepper (if desired).
  3. In a pan, sauté the onions in olive oil until they are translucent.
  4. Add the boiled potatoes and stir well.
  5. Bring the pan to a simmer and cook for 5-7 minutes, adding salt and pepper if needed.
  6. Add the mozzarella cheese and stir until the cheese is completely melted.
  7. Taste and add thyme and parsley if desired.
  8. Transfer the preparation into a baking dish and bake in a preheated oven at 180°C for 20-25 minutes, until the surface is golden.
