Alba Almond Cake

A delicious and crunchy cake, typical of Alba in Piedmont, perfect as a dessert or snack.

Ingredients
- 200 g of toasted almonds
- 100 g of sugar
- 100 g of flour
- 2 eggs
- 50 g of butter
- 1 teaspoon of vanilla powder
- 1/2 teaspoon of baking soda
- 1/4 cup of milk
Method
- Take the toasted almonds and blend them in a mixer until you get a fine powder.
- While the almond powder is cooling, preheat the oven to 180 degrees Celsius.
- In a bowl, mix the flour, sugar, vanilla powder, and baking soda.
- In a separate bowl, beat the eggs with the butter and milk.
- Add the flour mixture to the egg mixture and stir until you get a homogeneous mixture.
- Finally, add the almond powder and stir gently.
- Pour the batter into a greased pan and bake in the oven for 25-30 minutes, until the surface is golden.
- Let it cool before serving.
The story
The Alba Almond Cake has a history dating back to the Spanish domination era, when local farmers started using local almonds to create this sweet treat.
