Adana Onion Puree

Ingredients
- 500 g of Adana onions
- 50 ml of olive oil
- 2 tablespoons of butter
- 1/2 onion, finely chopped
- 1/2 teaspoon of sugar
- salt and pepper to taste
- 200 ml of milk
Method
- Prepare the Adana onions by washing and quartering them.
- In a pan, heat the olive oil and butter, and sauté the finely chopped onion until it turns golden.
- Add the quartered onions and cook over medium heat for about 20-25 minutes, or until they are soft and crispy.
- In a bowl, mix the cooked onions with the remaining butter, milk, salt, pepper, and sugar.
- Hand-mix until you get a smooth and creamy consistency.
- Serve the onion puree as a sauce for meat dishes or as an appetizer.
