Ingredients

  • 500 g of Adana onions
  • 50 ml of olive oil
  • 2 tablespoons of butter
  • 1/2 onion, finely chopped
  • 1/2 teaspoon of sugar
  • salt and pepper to taste
  • 200 ml of milk

Method

  1. Prepare the Adana onions by washing and quartering them.
  2. In a pan, heat the olive oil and butter, and sauté the finely chopped onion until it turns golden.
  3. Add the quartered onions and cook over medium heat for about 20-25 minutes, or until they are soft and crispy.
  4. In a bowl, mix the cooked onions with the remaining butter, milk, salt, pepper, and sugar.
  5. Hand-mix until you get a smooth and creamy consistency.
  6. Serve the onion puree as a sauce for meat dishes or as an appetizer.
