Swedish Meatball Soup
Join a century-old tradition with this delicious Swedish meatball soup.

Ingredients
- 400 g of beef meatballs
- 200 ml of beef broth
- 100 ml of milk
- 50 g of butter
- 2 onions
- 100 g of grated gruyère cheese
- salt and pepper to taste
- 200 ml of vegetable broth
- 200 g of potatoes
- 200 g of green beans
- 200 g of lentils
Method
- In a pot, cook the beef meatballs in salted water for 10-15 minutes, then drain and cut into pieces.
- In the same pot, sauté the onions in a bit of butter. Add the beef meatballs and cook for 5-7 minutes.
- Pour in the beef broth and milk, add salt and pepper to taste. Stir well and bring to a boil.
- Add the lentils, cubed potatoes, and green beans. Cook for another 10-15 minutes.
- Just before serving, add the grated gruyère and stir until it melts.
- Serving suggestion: serve hot in a bowl and garnish with some chopped parsley.
