Ingredients
- 1 cup of all-purpose flour
- 2 cups of coconut milk
- 1/2 cup of sugar
- 1/4 cup of vegetable oil
- 1/2 cup of water
- 1/2 cup of caramelized sugar
- 1/2 cup of chopped nuts (such as almonds)
- 1/2 cup of fresh fruit pieces (such as mango or banana)
Method
- In a bowl, mix the flour, coconut milk, sugar, and oil until you get a smooth batter.
- Add the water and mix well to combine all the ingredients.
- Heat a non-stick pan and pour a small amount of the batter to form a thin crepe.
- Cook the crepes on medium heat until they are crispy.
- In another pan, caramelize the sugar and add the chopped nuts.
- Place the crepes over the caramelized nut mixture and top with fresh fruit.
- Serve immediately to enjoy the crispy and fresh fruit.
