  • 1 cup of all-purpose flour
  • 2 cups of coconut milk
  • 1/2 cup of sugar
  • 1/4 cup of vegetable oil
  • 1/2 cup of water
  • 1/2 cup of caramelized sugar
  • 1/2 cup of chopped nuts (such as almonds)
  • 1/2 cup of fresh fruit pieces (such as mango or banana)

Method

  1. In a bowl, mix the flour, coconut milk, sugar, and oil until you get a smooth batter.
  2. Add the water and mix well to combine all the ingredients.
  3. Heat a non-stick pan and pour a small amount of the batter to form a thin crepe.
  4. Cook the crepes on medium heat until they are crispy.
  5. In another pan, caramelize the sugar and add the chopped nuts.
  6. Place the crepes over the caramelized nut mixture and top with fresh fruit.
