Huevos a la Minuta

Ingredients
- 4 eggs
- 2 onions
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon vinegar
- 1 tablespoon soy sauce
- 1 tablespoon chili powder
- 1 tablespoon fresh cilantro, chopped
Method
- Beat the eggs in a bowl and add salt and pepper. Mix well.
- In a non-stick pan, sauté the chopped onions until they become translucent.
- Add the olive oil and the beaten eggs. Cover the pan and cook for about 2-3 minutes, until the eggs are set.
- In a tablespoon, mix the vinegar, soy sauce, chili powder, and cilantro. Add this mixture to the pan with the eggs.
- Stir well and cook for another 1-2 minutes, until the sauce has integrated with the eggs.
- Serve immediately, hot, as a side dish with your favorite meal.
