Fresh Spring Rolls
This fresh and light dish is a delightful mix of vegetables and garlic sauce served cold.

Ingredients
- 200g of asparagus
- 100g of carrot
- 100g of red onion
- 100g of red bell pepper
- 100g of green bell pepper
- 10 lettuce leaves
- 1 red onion
- 2 tablespoons of olive oil
- 1 tablespoon of white vinegar
- 1 tablespoon of soy sauce
- 2 tablespoons of lemon juice
- Salt and pepper to taste
Method
- Wash and thinly slice the asparagus, carrot, onion, bell peppers, and endive.
- In a pan, sauté the onion in olive oil for 2 minutes.
- Add the carrot and asparagus, sauté for 5 minutes.
- In a separate container, mix the white vinegar, soy sauce, and lemon juice.
- Wrap the sliced vegetables and endive in a sheet of cooking paper, rolling tightly.
- Dip the rolls in the prepared sauce for 5 minutes.
- Serve cold, seasoning with salt and pepper to taste.
- Moisten the edges with a little water to seal the rolls.
