A succulent and refreshing egg yolk glass noodle salad, seasoned with a blend of flavors and aromas typical of Nakhon Ratchasima.

Ingredients
- 200g of glass noodles
- 4 goose eggs
- 100g of swordfish, cut into pieces
- 100ml of orange juice
- 2 tablespoons of soy sauce
- 1 tablespoon of sugar
- 1/2 cup of chopped red onion
- 2 tablespoons of almond oil
- 1 tablespoon of beef vinegar
- 1 tablespoon of chili powder
- 100g of arugula
- 100g of spinach
Method
- Rinse the glass noodles to remove the glutinous coating, then boil for 2-3 minutes and drain.
- Beat the goose eggs in a bowl and fry in a pan with a bit of almond oil until they are fried.
- In a bowl, mix the orange juice, soy sauce, sugar, beef vinegar, and chili powder.
- In a separate bowl, mix the chopped red onion with the almond oil.
- In a large bowl, mix the glass noodles, swordfish, prepared sauce, onion with oil, and the greens.
- Add the fried goose eggs and mix well.
- Serve immediately topped with arugula and spinach.

In Nakhon Ratchasima, this salad has become popular for its freshness and the contrast between the sweetness of the orange juice and the brininess of the fish. It is traditionally prepared during autumn celebrations.
