A hearty and comforting traditional Appalachian dish made with chicken, vegetables, and tender dumplings.

Ingredients
- 4 chickens, cut into pieces
- 2 onions, chopped
- 2 carrots, sliced
- 2 zucchinis, sliced
- 2 tablespoons of butter
- 1 liter of chicken broth
- 1/2 cup of flour
- 1/2 cup of milk
- 1/2 cup of water
- Salt and pepper to taste
- 1 tablespoon of chopped parsley
- 12 small dumplings
Method
- In a large pot, sauté the onions in butter until they become translucent.
- Add the carrots and zucchinis, sauté for 5 minutes.
- Add the chicken pieces, chicken broth, salt, and pepper. Bring to a boil and cook for 30 minutes.
- In another bowl, mix the flour with milk and water to form a dough.
- Add the flour dough to the chicken broth and stir well.
- Boil for 5 minutes, then add the small dumplings and cook for 5 more minutes.
- Stir occasionally and add the chopped parsley.
- Serve hot with a drizzle of olive oil if desired.
